Paleo Macadamia-Coconut Chocolate Chip Cookies Recipe

Dry Ingredients:
    • 1 1/3 cup almond flour
    • 1/2 tsp soda
    • 1/2 tsp salt
    • 1 cup unsweetened shredded coconut
Wet Ingredients:
Fold In:
  • 1/3 cup dark chocolate chips (Enjoy Life brand recommended)

Instructions

  1. Make the easy Paleo Macadamia-Coconut Butter first
  2. Preheat your oven to 350º F
  3. Mix all the Dry Ingredients together in a large bowl
  4. In a separate smaller bowl, mix together all the Wet Ingredients
  5. Pour the wet mixture into the bowl with the dry ingredients and mix well
  6. Lightly fold in the chocolate chips
  7. Line a baking sheet with parchment paper
  8. Form teaspoon-sized dollops with a rounded top and place on the parchment-lined cookie sheet
  9. Bake at 350º F for about 9-11 minutes, or until edges turn golden brown (oven temperatures and cooking times always vary – keep a close eye on your cookies!)
  10. Cool slightly, then remove from parchment paper
  11. Store in air-tight container
